This module will outline how to confidently identify gluten-free alternatives when catering for someone with coeliac disease and how to ensure that you can safely manage the gluten-free environment. We also discuss how to maintain good nutrition on a gluten-free diet and some of the practical ways to maximise choice, whilst avoiding cross-contamination.
